My Week’s Intentions

Happy Sunday, Everyone! Who’s ready for another week? Especially one with a holiday slap dab in the middle! Yes I’ll take it, thank you very much!

I could use some more rest time with the family. Seems I’m craving quite a lot of it lately. Not sure if it’s because of the hurried pace of life recently or the blazing sun baring down on us, but I’m beat. In fact, all I’ve done so far today is cook a little sausage and waffles for the fam then lay around and be lazy. Which is why one of my intentions for this upcoming week is to rest:)

Last week’s intentions:

  • Take Bella for a longer than usual walk after work.
  • Complete my copycat Royal Wedding Cake (Lemon Elderflower Cake).
  • Upload pictures of bakes to my Gallery page (which I’m having a hard time doing, because I can’t get them just as I want them).
  • Take a moment before going to bed each day for reflection – either by writing in my journal or documenting here with a picture, poem, or story.
  • Wednesday evening – bake the sponges for EG’s birthday cake.
  • Thursday evening – make the fondant unicorn horn and ears.
  • Friday evening – make icing and pipe flower mane.
  • Saturday – put EG’s cake together with final touches.

Last week, I got Emma Grace’s birthday cake made and put together. It took quite a lot of time and effort but it was so worth it. It was so fun, and seeing her face was priceless. Of course, I learned a few things to do differently next time when making a cake of this size… for example, not letting butter sit out all day before baking with it. In summertime Florida, it doesn’t take all day (12+ hours) for eggs and butter to reach room temperature. The butter actually gets very runny if left out that long. Not necessary and not conducive to a stable meringue buttercream.

And I didn’t finish my copycat Royal Wedding Cake. It got a crumb coat of icing and went back in the freezer to set… but that’s where I left off. With the enormous unicorn cake looming at the horizon, I couldn’t muster up the energy to whip up more buttercream. So.. another time, another bake:)

This week’s intentions:

  • Take Bella for a longer than usual walk after work.
