I’m beginning to wonder… do I make these lists too long??
I marked off only 2 from last week and yet I feel my week was so busy. What on earth did I do?!
Well let’s see… I was still recovering after the skin cancer removal from my leg, which did slow me down for quite some time (literally). Then I had cataract surgery on the eye I had retinal detachment repair last September, so that took a good day or two out of the mix. So I guess I shouldn’t be too hard on myself.
I do still need to work on taking a few minutes each day to bring myself back to center (that’s one of the intentions of this List of Intentions:) ) And the only reason I made more Swiss meringue buttercream was because I started a copycat of the Royal Wedding Cake – something I’ve been wanting to do ever since the wedding but finally ordered elderflower essence, so now I can!!
But without further adieu, my list from last week…
Last week’s intentions:
- Take Bella for a longer than usual walk after work.
- Upload pictures of bakes to my Gallery page.
- Take a moment before going to bed each day for reflection – either by writing in my journal or documenting here with a picture, poem, or story.
Make more swiss meringue buttercream to play with.Take 3 minutes every day (whenever, wherever I can) to breathe deep, even breaths to bring myself back to center.- Start planning EG’s birthday cake.
- Finish reading Circling the Sun.
(And might I add, I baked a crusty cob loaf of bread on Saturday and practiced making more buttercream flowers with leftover Italian meringue buttercream, too.)

This week will be a bit busier, I’m afraid, with the unicorn cake for our soon-to-be 12 year old’s birthday celebration I’m planning to make! (Stay tuned for photos!)
But nonetheless, I’ve brought forward a few of my intentions from last week and added one or two… plus the cake, eek!!
This week’s intentions:
- Take Bella for a longer than usual walk after work.
- Complete my copycat Royal Wedding Cake (Lemon Elderflower Cake).
- Upload pictures of bakes to my Gallery page (which I’m having a hard time doing, because I can’t get them just as I want them).
- Take a moment before going to bed each day for reflection – either by writing in my journal or documenting here with a picture, poem, or story.
- Wednesday evening – bake the sponges for EG’s birthday cake.
- Thursday evening – make the fondant unicorn horn and ears.
- Friday evening – make icing and pipe flower mane.
- Saturday – put EG’s cake together with final touches.
