In the morning, I usually have toast with butter and blackberry preserves. It’s tasty, sweet, and gets my day going. But one day last week, I didn’t feel like having the “usual”. I wanted a smoothie.
So I looked in the frig to see what I could find for smoothie ingredients… I found strawberries, pineapple and cucumber. Brilliant.
I knew I still needed some sort of protein, so I reached for my sunflower seed butter out of the pantry.
I had no idea what the outcome would be, nor if it would even taste good. But to my surprise, it not only tasted good but looked pretty too. BONUS!
Fast-forward several days to today… Tuesday…
Tuesdays are not my favorite day of the week, for whatever reason. Maybe it’s because the weekend high is totally gone. Yes, a high totally legal, I assure you. It’s made from spending time with family, doing things I love, and yoga at one of my favorite studios 2 days in a row.
Or maybe it’s because we’re not quite half way through the week yet. Not yet to Wednesday, hump day!
Or maybe it’s because some weeks the kids are so ready to get back to their dad’s house that by Tuesday they’re completely bonkers. Craziness, I tell you.
So upon waking this morning, I decided to blend my new favorite smoothie, give it a name and re-name the day… SunBerry Day. Cheesy, yes, but it made me smile. (As did a certain phone call…)
For those of you wanting the recipe:
- 10-12 large strawberries
- 1/3 of a cucumber (skin on)
- 1 heaping cup of pineapple (or more, to your liking)
- 1 heaping Tablespoon of sunflower seed butter
(If needed, add liquid… I added a swig of organic pineapple juice.)
And delish! You have a smoothie even the toughest critic would enjoy! …Like my husband;)
